THE LEVANTINE WAY

The method we tested until it was right.

Heat a pan over high heat first. Once the pan is hot, reduce the heat to medium-low. Lightly brush both sides of the shrak with olive oil, then place the wrap in the pan. Cook for 3–4 minutes per side, until the shrak blisters, crisps and turns golden.

That is exactly how we do it ourselves.

Always ensure the chicken reaches an internal temperature of 165°F before eating.
